We are just amateur cooks, but we are egg savants. As breakfast is our favourite meal of the day, we have experimented a lot with eggs. They may not be authentic but they are all delicious.
Since we don’t add much salt to our food, feel free to customize them as per your liking. Here are our favourite egg recipes (Serves 2):

Monday mushroom & tomato fluffy fritata

Prep Time: 5 minutes, Cook Time: 12 minutes

Ingredients
4 eggs
100 gms mushrooms
4-5 cherry tomatoes
Butter
Olive Oil
Salt, Pepper & Basil to season
1/2 cup milk

Process

Toss the mushrooms with butter and pepper. Keep them aside to use later.
Whisk the eggs with milk till bubbles form. On a pan, put two teaspoons of olive oil and spread it evenly. Pour in the eggs, cover the pan and slow cook on low heat for 5 minutes. Evenly spread the mushrooms and cherry tomatoes over the eggs, cover the pan with a lid and cook for another 5 minutes. Transfer to a plate.

Tuesday leftover rice egg fried rice

Prep Time: 15 minutes, Cook Time: 15 minutes

Ingredients
4 eggs
300 gms cooked rice
1 diced large onion
1 bowl of diced mixed veggies of your choice
2 cloves of garlic
1/2 teaspoon ginger
1 teaspoon sesame oil
2 tablespoons canola oil
1 teaspoon of soya sauce
1 teaspoon of vinegar
1 teaspoon chilli sauce
Salt, Pepper & Chives to season

Process

Scramble three eggs with some canola oil and put aside. In a wok (or kadai), put two spoons of oil and fry the onion and garlic until the onion is salmon in colour. Add in the other veggies and cook them until they soften.
Add soya sauce, vinegar, sesame oil, chilli sauce, pepper and salt. Add in the cooked rice and mix well. Cover and leave it for 5 minutes for the flavours to mix. Check if the seasoning is as per your liking and turn off the flame. Top it off with a sunny side up and chives.

Wednesday baked eggs with sausages and charred bell peppers

Prep Time: 15 minutes, Cook Time: 15 minutes

Ingredients
4 eggs
1/2 Red bell pepper
2 diced Chicken/Pork sausages
Salt & Pepper to season
Butter

Process

Take a baking dish and evenly spread butter on it. Break four eggs and place them directly in the baking bowl with the yolk intact. Bake for 7 minutes at 180 C.
In a pan, char bell peppers with a teaspoon of oil and toss the diced sausage for two minutes.
Transfer the sausages and bell peppers onto the baking bowl with half baked eggs. Bake for another 5 minutes at 180 C.

Thursday homemade guacamole and soft boiled egg bagel

Prep Time: 10 minutes, Cook Time: 5 minutes

Ingredients
1 plain/sesame bagel
2 eggs
1 avocado
1/2 onion
1 tomato
1 clove garlic
Salt
Lime juice

Process

For perfect soft boiled eggs, put the eggs in cold water and take it off heat as soon as the water starts to boil. Leave the eggs in hot water for 5 minutes and then transfer them to cold water.

For the guacamole: Chop onions and place them in warm water. Remove seeds from tomato and finely chop it. Peel a ripe avocado and mash it with a fork. add the onion, tomato, lime juice and salt. You can chill it for better taste.

Toast a bagel and spread guacamole on it. Add the soft boiled eggs and enjoy!

Friday cheddar zucchini baked egg

Prep Time: 7 minutes, Cook Time: 15 minutes

Ingredients
4 eggs
1/2 cup milk
1 medium-sized zucchini
Cheddar Cheese
Ricotta/Feta
Paprika
Olive oil
Salt to season

Process

Thinly slice Zucchini and dip it in olive oil with salt and paprika. Char the Zucchini slices on a pan and keep aside.
Grease a baking bowl with oil. Whisk eggs with milk until bubbles are formed. Add 3-4 layers of charred zucchini slices. Keep a few slicesto use later. Pour beaten eggs into the baking bowl and bake for 7 minutes at 180 C. Add a few more slices of zucchini to the top and grated cheddar. Bake for another 5 minutes. Add some ricotta and bake for 1 minute.

Toast a bagel and spread guacamole on it. Add the soft boiled eggs and enjoy!

Saturday fifteen seconds scrambled eggs

Prep Time: 0 minutes, Cook Time: 15 seconds
Ingredients

4 eggs
2 toasts

Process

Put eggs in a hot pan with oil. Stir-fry for 15 seconds and place on a toast. Do not cook it for a second more!

Sunday egg in bell-pepper

Prep Time: 5 minutes, Cook Time: 10 minutes
Ingredients

2 red bell peppers
2 eggs
Steamed carrots and beans
Pepper to season

Process
Cut the top off of the bell peppers and remove its seeds. Break and place an egg with yolk intact into the bell pepper. Bake for 7 minutes at 200 C. Season with pepper. Serve with steamed carrots and beans. You may add salt too.
