With our network on social media becoming more substantial, we have been talking to food enthusiasts all over the world. While talking to our Filipino friend in Dubai, we realized we hadn’t tried any food from the Philippines. We were surprised to find no restaurant in Delhi serves Filipino food either. So, we took matters in our own hands and gave chicken Adobo a try. It was simple, quick, healthy and yummy.
Prep Time: 5 minutes, Cook Time: 30 minutes
Ingredients
For the marinade:
500 gms chicken (bone-in)
2 tablespoons of soy sauce
2 tablespoons of cane vinegar (we used apple cider)
3-4 cloves of garlic
Pepper
For the broth
2 tablespoons vegetable oil
2-3 Bay leaves
1 teaspoon of sugar (optional)
1 teaspoon of minced garlic
Salt and pepper
Process
- Pour soy sauce, vinegar, minced garlic and pepper in a large bowl. Dip the chicken pieces in it and coat them from all sides. Set aside for one hour
- In a large skillet, add vegetable oil and pan fry the chicken pieces till they are golden brown and set aside.
- Put the marinade with minced garlic, sugar, whole & ground pepper, salt and water. Bring it to a boil and add the chicken. Cover and reduce the heat and let it cook for 30 minutes.
Ours was dry, but one can also leave some gravy and have it with rice.
